Appetizers: Amber Cheese Dip, Wings of the Comanchero, Smoked Porter Crab Dip, and Porter Potato Chips

Salad: Beer Potato Salad

Amber Cheese Dip from Hillshire Farms website

Ingredients:

1 lb. American cheese, cubed

4 oz. Cream cheese, cubed

¾ cup Alaskan Amber

½ cup Dijon mustard

½ teaspoon Worcestershire sauce

¼ teaspoon garlic powder

Pinch of cayenne pepper

Small smokies sausages or mixed vegetables for dipping.

Directions:

Melt cheese over low heat in a heavy saucepan until smooth and blended. Slowly add other ingredients. Stir until well blended. Remove from heat and serve with little smokies, veggies, or bread.

Ingredients:

Frontier Steak Sauce:

1 ½ cups Alaskan Frontier

1/3 cup dry sherry

¼ cup honey

1/3 cup malt vinegar

1/3 cup dark soy sauce

½ tsp. Liquid smoke (hickory or mesquite)

½ medium yellow or white onion, coarsely chopped

4 large cloves garlic, peeled

½ cup raisins

¼ tsp. Hot red chili flakes (to taste)

1 T. fresh orange zest

½ tsp. freshly ground black pepper

Marinade:

2/3 cup Frontier steak sauce (recipe follows)

2 cloves garlic, minced and mashed

3 T cornstarch

36 chicken wings

oil for frying

For serving sauce:

1 ½ cups tomato juice

½ cup Alaskan Frontier

½ to 1 tsp. Hot red chili powder

1 canned or dried reconstituted chipotle chili

2 cloves garlic, minced and mashed

1 tsp. Paprika

½ tsp. Liquid smoke

¼ to ½ tsp. Salt (optional)

Directions:

Steak Sauce:

Combine ingredients in a blender and puree until smooth. Pour into a medium saucepan and bring to a slow simmer. Simmer for 20 minutes.

Wings:

Blend steak sauce, garlic and cornstarch and marinate wings in refrigerator 4 – 6 hours.

Drain and pat dry. Heat oil to 375 degrees in a deep skillet. Fry wings a few at a time until crisp and cooked through, drain on paper towels.

Simmer all remaining ingredients uncovered for 40 minutes, stirring frequently

Pour hot sauce over fried wings and serve immediately.

Smoked Porter Crab Dip from alaskanbrewing.com

 Ingredients:

4 cups fresh Alaska crab, cooked and flaked

1 8 oz package cream cheese

¼ cup mayonnaise

¼ cup ketchup

2 Tablespoons garlic, chopped

1 teaspoon horseradish

1 Tablespoon soy sauce

½ cup Alaska Smoked Porter

Salt and pepper to taste

 

Directions:

Combine all ingredients in food processor and pulse to desired consistency. A bowl, spoon and strong arm can replace food processor:) Serve with Porter Potato Chips.

Porter Potato Chips from alaskanbrewing.com

Ingredients:

 5 lb. Potatoes, washed and thinly sliced

2 16 oz. bottles Alaskan Smoked Porter

2 cups teriyaki

2 cups soy sauce

2 Tablespoons garlic, chopped

Directions:

Combine all ingredients and put in large Ziploc bag. Squeeze air out of bag and seal. Marinate in refrigerator overnight.

Preheat oven to 450 degrees. Drain potatoes and lay on cooking sheets in a single layer and bake until golden brown. Remove from oven. Sprinkle salt and granulated garlic to taste. Serve with Alaskan Smoked Porter Crab Dip.

Beer Potato Salad

Ingredients:

3/4 cup mayonnaise

3/4 cup sour cream

1/4 cup beer

6 cups cooked potatoes, peeled and cubed

1Ú2 cup onions, chopped

3/4 cup celery, chopped

1/2 pound bacon, cooked and crumbled

salt & pepper to taste

Directions:

Blend mayonnaise, sour cream and beer. Toss lightly with potatoes, onion and celery. Garnish with crumbled bacon. Salt and pepper to taste. Chill for three hours for a summer delight or place in slow oven (275 degrees) for 20 minutes to accompany a winter supper.

The Classic American Beer Sloppy Joe

Ingredients:

1½ pounds ground beef (can substitute ground turkey)

3 tablespoons olive oil

1 large green bell pepper - chopped

4 large garlic cloves - chopped

1¼ cups of beer

3 tablespoons chili powder

1 can diced green chilies - 4 ounces

¾ cup bottled chili sauce (can substitute ketchup)

2 tablespoons Worcestershire sauce

1 cup green onions - finely chopped

6 soft sandwich buns

Directions:

1. Heat oil in heavy large pot over medium-high heat.

2. Add ground beef (or ground turkey), green pepper, and garlic. Sauté until meat is browned - approximately 10 minutes.

3. Mix in chili powder - stir for 1 minute.

4. Add beer, green chilies, chili sauce, and Worcestershire sauce next.

5. Reduce heat to medium-low and simmer until mixture thickens, stirring often - approximately 15 minutes.

6. Mix in green onions (optional - season with salt and pepper).

7. Serve on soft sandwich buns with American or cheddar cheese.

Alaskan Stout Oatmeal Cookies from alaskanbrewing.com

Ingredients:

½ lb. Butter

2/3 cup sugar

2/3 cup brown sugar

1 egg

1 T. molasses

3 T. Oatmeal Stout

1 tsp. Vanilla

1 tsp. Salt

1 tsp. Cinnamon

½ tsp. Nutmeg

¼ tsp. Cloves

½ tsp. Baking soda

½ tsp. Baking powder

1 ½ cup flour

2 cups oatmeal

¾ cup walnuts

¾ cup chocolate chips

Directions:

Cream butter and sugar. Add all liquid ingredients and mix until well combined. Add the dry ingredients and mix until combined. Drop with spoon onto cookie sheet and bake at 350 degrees for 10 – 12 minutes until done.
